How many grams are in a cup?

"How many grams in a cup?" has no single answer, and that is not a technicality — it is the whole problem. A cup is a fixed volume. A gram is a fixed mass. Moving between them requires knowing what is in the cup, because the answer ranges from about 50 g to about 340 g depending on the ingredient.

Worse, the same ingredient does not even give a consistent answer. A cup of flour can vary by 20% depending on whether you scooped it, spooned it, or sifted it first.

What a cup of common ingredients actually weighs

These are approximate working values for a US cup (236.6 mL). They vary by brand, humidity and how the ingredient was measured — which is exactly the point.

Honey is nearly four times as heavy as rolled oats for the same cup. There is no factor that covers both. UnitFlip's cooking converter stores a density per ingredient for this reason rather than pretending one number will do.

The flour problem, specifically

Flour is the ingredient where volume measurement fails hardest, because it compacts. Three ways of filling the same cup:

  • Dip and sweep — plunge the cup into the bag and level it off. Compacts the flour: about 140–150 g.
  • Spoon and level — spoon flour into the cup, then level. About 120–130 g. This is what most published recipes assume.
  • Sifted first — aerated, so lighter still: about 110–115 g.

That is a spread of roughly 30 g on a single cup — around 25%. In a bread dough, 25% more flour against the same water takes the hydration from workable to stiff. In a cake it is the difference between tender and dry. The recipe author cannot control which method you used, which is why serious baking recipes give grams.

Rule of thumb: if a recipe's success depends on ratios — bread, pastry, macarons, caramel — weigh it. If it is a stew, a soup or a stir-fry, volume is fine and always was.

Which cup, though?

Before you convert anything, establish which cup the recipe means. There are four in circulation:

The spread from 236.6 to 284 mL is 20%. Combine that with the flour measurement spread and a badly converted recipe can be out by nearly half on a single ingredient. Tablespoons vary too — 15 mL in most places, but 20 mL in Australia.

Converting a US recipe properly

  1. Identify the cup. A US recipe means 236.6 mL. If it lists ounces alongside, check whether they are fluid ounces (volume) or ounces (weight) — "8 oz flour" is weight, "8 oz milk" is almost always volume.
  2. Convert liquids by volume. Water, milk, stock and oil go straight to millilitres. Nothing about the ingredient matters.
  3. Convert solids by weight, using a density. Do not use a generic cup-to-gram number. Use a per-ingredient figure, and prefer the recipe author's own gram equivalent if they gave one.
  4. Leave butter alone if you can. US butter comes in 4 oz (113 g) sticks marked in tablespoons, which is a weight measurement in disguise and converts cleanly.
  5. Do not convert eggs. "Large" means different things in different countries — a US large egg is about 50 g of contents, a UK large is about 56 g. For sensitive recipes, weigh the beaten egg.

Baker's percentages, and why professionals never use cups

Professional baking expresses every ingredient as a percentage of the flour weight: flour is 100%, water might be 65%, salt 2%, yeast 1%. The system only works with mass, and it makes scaling trivial — double every number and the dough behaves identically.

You cannot do this with cups, because the percentages would depend on how each ingredient packs. That is the clearest practical argument for weighing: not that grams are more accurate in the abstract, but that mass ratios stay true when you scale a recipe and volume ratios do not.

Where volume is genuinely better

It is not all one way. Volume wins when:

  • The quantity is tiny — a quarter teaspoon of baking soda is easier to measure by spoon than on most kitchen scales.
  • The ingredient is a liquid you are pouring anyway.
  • You are cooking rather than baking, where a 10% variance changes nothing.
  • You have no scale, which is the situation the US cup system was designed around.

A digital scale that reads to 1 g removes most of these caveats and costs less than a set of measuring cups. If you follow recipes from more than one country, it is the single change that eliminates the most conversion problems at once.
